Chicha Facil

Ingredients

• 2-3 pounds corn
• 2-3 pounds pilon cillo or chancaca (similar to brown sugar)

Procedure

• Wash corn with warm water.
• Put corn in a ceramic pot.
• Add enough water to cover the corn, cover pot, and let stand for 2-3 days.
• In 2-3 days, the corn will have started to grow. Now add more water and the pilon cillo.
• Cover pot opening well with a cloth and allow it to ferment for about 8 days.
• You may want to keep the pot topped up with water as the chicha is consumed until it looses its strength and character.
