Chicha Facil
Ingredients
- 2-3 pounds corn
- 2-3 pounds pilon cillo or chancaca (similar to brown
sugar)
Procedure
- Wash corn with warm water.
- Put corn in a ceramic pot.
- Add enough water to cover the corn, cover pot, and let stand for
2-3 days.
- In 2-3 days, the corn will have started to grow. Now add more water
and the pilon cillo.
- Cover pot opening well with a cloth and allow it to ferment for about
8 days.
- You may want to keep the pot topped up with water as the chicha is
consumed until it looses its strength and character.
